Preparation

Thaw roast.
Remove roast from the bag. Place in a shallow pan. Cover with foil. Place in preheated 365°F oven until the center of the roast reaches desired “doneness” using the chart below. At 365°F it will take approximately 1.5 - 2 hours to reach an internal temp of 135°F. Use an oven proof thermometer to determine internal temperature. Allow roast to stand for 15 minutes. Slice and serve.

Internal Temp.
Rare 120°F.
Medium Rare 130° - 140°F.
Medium 140° - 150°F.
Medium Well 160°F.
Well 170°F.
